Biography
Dr. Atinuke Ogunjesa is a lecturer in the Department of Animal Science with a PhD in Animal Products and Processing. Her teaching and research are centered on animal products and processing, with particular interests in meat quality, rabbit production, and the application of nutritional strategies to enhance the quality and functionality of animal-derived foods.
Her research investigates the use of phytogenic feed additives as dietary interventions to improve rabbit meat quality. Specifically, she examines the effects of Curcuma longa (turmeric) and Piper guineense (West African black pepper) incorporated into rabbit diets on growth performance, carcass characteristics, meat composition, amino acid profile, water-holding capacity, and the functional properties of rabbit meat. Her work integrates aspects of animal nutrition and meat quality evaluation to elucidate how dietary manipulation can improve the nutritional value and processing characteristics of animal products while supporting sustainable livestock production.
Dr. Ogunjesa is committed to excellence in teaching, student mentorship, and research that addresses emerging challenges in animal agriculture and food systems. She has published in peer-reviewed journals and presented her findings at a scientific conference, contributing to knowledge on sustainable livestock production and animal product quality.
Her research interests include animal products and processing, meat quality evaluation, nutritional enhancement of animal products, rabbit production, phytogenic feed additives, sustainable livestock production, and value addition in animal-derived foods. She welcomes collaborative research aimed at advancing innovation, food quality, and food security through evidence-based approaches to animal production and processing.
