Biography
Ayo Olugbuyi is a food scientist and researcher with a strong interest in food product development, food processing, nutrition, and the sustainable utilization of indigenous and underutilized crops to improve food security and public health. Her research focuses on the development and optimization of functional foods, composite flours, breakfast cereals, baked products, and complementary foods using locally available agricultural resources.she is particularly interested in enhancing the nutritional, techno-functional, and sensory qualities of food products through innovative processing techniques and value addition.
Her research has contributed to the development of nutrient-dense food products from crops such as orange-fleshed sweet potato, finger millet, acha (fonio), Bambara groundnut, African yam bean, pigeon pea, sesame, rice bran, and other indigenous food materials. she employs multidisciplinary approaches involving food chemistry, product optimization, statistical experimental design, sensory evaluation, and nutritional assessment to address contemporary challenges in food systems.
Ayo has published articles in reputable peer-reviewed journals and actively participates in academic conferences and scientific collaborations. Her scholarly interests include functional foods, food fortification, food quality evaluation, food security, sustainable food systems, and the valorization of indigenous crops for improved nutrition and economic development.
Beyond research, she is passionate about mentoring young researchers, promoting excellence in scholarship, and translating scientific findings into practical solutions that benefit industry, communities, and policymakers. His long-term vision is to contribute to the advancement of food science through innovative research that supports sustainable agriculture, improves human nutrition, and enhances global food security.
